Ingredients

- 200g halloumi cheese
- 1 cup couscous
- 1 1/4 cups water
- 2 tablespoons olive oil
- 1 tablespoon honey
- 1 teaspoon chili flakes
- 1 cucumber, diced
- 1 bell pepper, diced
- 1/4 cup fresh parsley, chopped
- Salt and pepper to taste
Instructions
- Cook the couscous: In a medium pot, combine the water and bring it to a boil. Stir in the couscous, remove from heat, cover, and let it rest for about 5 minutes. Once done, fluff it with a fork.
- Sear the halloumi: Heat olive oil in a non-stick pan over medium heat. Slice the halloumi and add it to the pan, cooking until golden brown, about 3-4 minutes per side.
- Mix the honey and chili: In a small bowl, combine honey with chili flakes and stir well.
- Assemble the salad: In a large mixing bowl, combine the fluffed couscous, diced cucumber, bell pepper, and parsley.
- Drizzle & toss: Pour your honey-chili mixture over the salad and gently toss everything together.
- Serve with style: Place the salad onto serving plates and top each with crispy halloumi pieces.
