Description

A vibrant salad featuring crispy halloumi, fluffy couscous, and a sweet-spicy honey drizzle.


Ingredients

  • 200g halloumi cheese
  • 1 cup couscous
  • 1 1/4 cups water
  • 2 tablespoons olive oil
  • 1 tablespoon honey
  • 1 teaspoon chili flakes
  • 1 cucumber, diced
  • 1 bell pepper, diced
  • 1/4 cup fresh parsley, chopped
  • Salt and pepper to taste

Instructions

  1. Cook the couscous: In a medium pot, combine the water and bring it to a boil. Stir in the couscous, remove from heat, cover, and let it rest for about 5 minutes. Once done, fluff it with a fork.
  2. Sear the halloumi: Heat olive oil in a non-stick pan over medium heat. Slice the halloumi and add it to the pan, cooking until golden brown, about 3-4 minutes per side.
  3. Mix the honey and chili: In a small bowl, combine honey with chili flakes and stir well.
  4. Assemble the salad: In a large mixing bowl, combine the fluffed couscous, diced cucumber, bell pepper, and parsley.
  5. Drizzle & toss: Pour your honey-chili mixture over the salad and gently toss everything together.
  6. Serve with style: Place the salad onto serving plates and top each with crispy halloumi pieces.
