Description

A delightful stack of marinated honey lime chicken served on a creamy avocado rice base, perfect for any occasion.


Ingredients

  • 1 lb chicken breasts (boneless, skinless)
  • 1/4 cup honey
  • 2 limes (juiced)
  • 1 tsp chili powder
  • 1/2 tsp cumin
  • Salt and pepper (to taste)
  • 1 cup rice (uncooked)
  • 1 avocado (diced)
  • 1/2 cup cilantro (chopped)
  • 1/4 cup sour cream

Instructions

  1. In a mixing bowl, whisk together the honey, lime juice, chili powder, cumin, salt, and pepper.
  2. Coat the chicken breasts generously in the marinade and let marinate in the refrigerator for at least 30 minutes.
  3. Prepare the rice according to package directions and fluff it with a fork.
  4. Heat your grill or skillet over medium heat and cook the marinated chicken for about 6-7 minutes on each side.
  5. In a large bowl, combine the cooled rice, diced avocado, chopped cilantro, and sour cream. Gently fold together.
  6. On serving plates, spoon a generous helping of creamy avocado rice and top with slices of honey lime chicken.
