- 1/4 cup sour cream
Instructions
- In a mixing bowl, whisk together the honey, lime juice, chili powder, cumin, salt, and pepper.
- Coat the chicken breasts generously in the marinade and let marinate in the refrigerator for at least 30 minutes.
- Prepare the rice according to package directions and fluff it with a fork.
- Heat your grill or skillet over medium heat and cook the marinated chicken for about 6-7 minutes on each side.
- In a large bowl, combine the cooled rice, diced avocado, chopped cilantro, and sour cream. Gently fold together.
