Description

  • 2 tablespoons fresh lime juice
  • 1 teaspoon lime zest
  • 2 garlic cloves, minced

  • 1 cup cooked white or brown rice
  • ¼ cup fresh cilantro, chopped
  • 2 ripe avocados, sliced
  • 1 tablespoon lime juice (for avocado)

Instructions

  1. Prepare the Marinade: In a large bowl, mix honey, lime juice, lime zest, minced garlic, salt, and pepper. Add the chicken, ensuring each piece is well coated. Cover and marinate for at least 30 minutes, or up to overnight for best results.
  2. Cook the Chicken: Heat oil in a skillet over medium-high heat. Add the marinated chicken breasts to the pan, ensuring not to overcrowd. Cook for 6–7 minutes per side or until golden brown and cooked through. The internal temperature should reach 165°F (75°C). Remove from heat and let rest for a few minutes.
  3. Prepare the Rice: In another bowl, mix the cooked rice with chopped cilantro, 1 tablespoon lime juice, and season with salt. Blend until each grain is evenly coated with flavors.
  4. Slice the Avocados: Slice the ripe avocados and drizzle with lime juice to keep their vibrant green color. Season with salt and pepper to taste.
  5. Stack It Up: On a plate, start with a generous layer of the cilantro-flavored rice. Layer the luscious honey-lime chicken on top, placing sliced avocado beautifully on the chicken.
  6. Garnish and Serve: Finish with a sprinkle of fresh cilantro and a dash of lime juice for an extra pop of flavor. Serve immediately and enjoy each mouthful!

Notes
