- 2 boneless, skinless chicken breasts
- 1/4 cup honey
- 1/4 cup lime juice (freshly squeezed)
- 2 tablespoons soy sauce
- 2 tablespoons olive oil
- 1 teaspoon garlic powder

- Salt and pepper to taste
- 1 cup cooked white rice
- 1 ripe avocado, diced
- 1/4 cup fresh cilantro, chopped
- 1 lime, cut into wedges for garnish
Instructions
- In a medium mixing bowl, whisk together honey, lime juice, soy sauce, olive oil, garlic powder, ground cumin, salt, and pepper until well combined.
- Place the chicken breasts in a shallow dish and pour the marinade over them, ensuring they are thoroughly coated. Cover with plastic wrap and let it marinate in the refrigerator for at least 30 minutes, or up to 2 hours.
- While the chicken marinates, combine the cooked white rice, diced avocado, and chopped cilantro in a large bowl. Gently stir until evenly mixed.
- Preheat your grill or grill pan over medium-high heat.
- Remove the chicken from the marinade and discard the leftover marinade. Grill the chicken for about 6-7 minutes on each side, until cooked through.
- Allow the chicken to rest for a few minutes before slicing.
- Begin with a scoop of the avocado rice mixture as your base, layer sliced chicken on top, and garnish with lime wedges.
