Description

Delicious homemade strawberry Nutrigrain bars filled with fresh strawberries and Medjool dates, perfect for a wholesome snack.


Ingredients

  • 1 cup all-purpose flour
  • ¾ cup whole wheat flour
  • ⅓ cup + 1 tablespoon brown sugar
  • ¾ teaspoon baking powder
  • ¼ teaspoon kosher salt
  • 6 tablespoons unsalted butter, very cold and cubed
  • 1 teaspoon vanilla extract
  • 2 eggs, whisked
  • 6 ounces fresh strawberries
  • 4 ounces pitted Medjool dates
  • ¼ cup spiced rum
  • ½ tablespoon honey
  • Zest and juice from half of a lemon
  • ½ teaspoon ground cinnamon
  • ⅛ teaspoon ground cloves
  • ⅛ teaspoon ground nutmeg
  • Pinch of salt

Instructions

  1. Add both flours, brown sugar, baking powder, and salt to a food processor. Pulse until well combined.
  2. Add the cold cubed butter and pulse until the mixture resembles coarse crumbs.
  3. Pour in the vanilla extract and ¾ of the whisked eggs. Pulse until the dough comes together.
  4. Shape the dough into a rectangle, wrap in plastic wrap, and refrigerate for at least 30 minutes.
  5. Preheat your oven to 350°F (175°C).
  6. Combine strawberries, Medjool dates, spiced rum, honey, lemon zest, lemon juice, ground cinnamon, ground cloves, ground nutmeg, and a pinch of salt in a saucepan. Stir well.
  7. Bring the filling mixture to a simmer and cook for about 15 minutes until thickened.
  8. Remove from heat and blend until smooth.
  9. Divide your chilled dough into four parts. Roll into rectangles.
  10. Pipe filling down the center of each rectangle and fold the sides over.
  11. Transfer to a parchment-lined baking sheet and bake for 18-22 minutes.
  12. Let cool on a wire rack before slicing into bars.

Notes

You can prepare the filling in advance and store it in the fridge for up to a week.
