Delicious homemade strawberry Nutrigrain bars filled with fresh strawberries and Medjool dates, perfect for a wholesome snack.

- 1 cup all-purpose flour
- ¾ cup whole wheat flour
- ⅓ cup + 1 tablespoon brown sugar
- ¾ teaspoon baking powder
- ¼ teaspoon kosher salt
- 6 tablespoons unsalted butter, very cold and cubed
- 1 teaspoon vanilla extract
- 2 eggs, whisked
- 6 ounces fresh strawberries
- 4 ounces pitted Medjool dates
- ¼ cup spiced rum
- ½ tablespoon honey
- Zest and juice from half of a lemon
- ½ teaspoon ground cinnamon
- ⅛ teaspoon ground cloves
- ⅛ teaspoon ground nutmeg
- Pinch of salt
Instructions
- Add both flours, brown sugar, baking powder, and salt to a food processor. Pulse until well combined.
- Add the cold cubed butter and pulse until the mixture resembles coarse crumbs.
- Pour in the vanilla extract and ¾ of the whisked eggs. Pulse until the dough comes together.
- Shape the dough into a rectangle, wrap in plastic wrap, and refrigerate for at least 30 minutes.
- Preheat your oven to 350°F (175°C).
- Combine strawberries, Medjool dates, spiced rum, honey, lemon zest, lemon juice, ground cinnamon, ground cloves, ground nutmeg, and a pinch of salt in a saucepan. Stir well.
- Bring the filling mixture to a simmer and cook for about 15 minutes until thickened.
- Remove from heat and blend until smooth.
- Divide your chilled dough into four parts. Roll into rectangles.
- Pipe filling down the center of each rectangle and fold the sides over.
- Transfer to a parchment-lined baking sheet and bake for 18-22 minutes.
- Let cool on a wire rack before slicing into bars.
Notes
You can prepare the filling in advance and store it in the fridge for up to a week.
