Description

Delicious bite-sized red velvet brownie bites with a creamy cream cheese filling, perfect for any occasion.


Ingredients

  • 9 tbsp Unsalted Butter
  • 1 1/4 cups Sugar
  • 1/4 cup Cocoa Powder
  • 1/2 tsp Vanilla Extract
  • 1 tbsp Red Food Coloring
  • 1/8 tsp Salt
  • 1/4 tsp Espresso Powder
  • 1/2 tsp Vinegar
  • 2 Eggs
  • 3/4 cup All-Purpose Flour
  • 9 oz Cream Cheese
  • 3 tbsp Sugar (for filling)
  • 1/2 tsp Vanilla Extract (for filling)
  • 1 Egg Yolk

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Line the mini muffin tin with parchment paper or grease the cups.
  3. In a medium mixing bowl, melt the butter and mix in the sugar, cocoa powder, salt, and espresso powder until smooth.
  4. Add the eggs, vanilla, red food coloring, and vinegar; blend until glossy, then fold in the flour carefully.
  5. In another bowl, combine cream cheese, sugar, vanilla, and egg yolk until smooth.
  6. Fill each muffin tin cup 2/3 full with brownie batter, add a dollop of cream cheese filling, then top with more brownie batter.
  7. Bake for 15-18 minutes until edges are set; a toothpick should come out slightly moist.
  8. Cool in the tin for 10 minutes, then transfer to a wire rack to cool completely.

Notes

Consider refrigerating overnight for deeper flavor. Can be air-fried at 320°F for 10-12 minutes.
