Delicious bite-sized red velvet brownie bites with a creamy cream cheese filling, perfect for any occasion.

- 9 tbsp Unsalted Butter
- 1 1/4 cups Sugar
- 1/4 cup Cocoa Powder
- 1/2 tsp Vanilla Extract
- 1 tbsp Red Food Coloring
- 1/8 tsp Salt
- 1/4 tsp Espresso Powder
- 1/2 tsp Vinegar
- 2 Eggs
- 3/4 cup All-Purpose Flour
- 9 oz Cream Cheese
- 3 tbsp Sugar (for filling)
- 1/2 tsp Vanilla Extract (for filling)
- 1 Egg Yolk
Instructions
- Preheat the oven to 350°F (175°C).
- Line the mini muffin tin with parchment paper or grease the cups.
- In a medium mixing bowl, melt the butter and mix in the sugar, cocoa powder, salt, and espresso powder until smooth.
- Add the eggs, vanilla, red food coloring, and vinegar; blend until glossy, then fold in the flour carefully.
- In another bowl, combine cream cheese, sugar, vanilla, and egg yolk until smooth.
- Fill each muffin tin cup 2/3 full with brownie batter, add a dollop of cream cheese filling, then top with more brownie batter.
- Bake for 15-18 minutes until edges are set; a toothpick should come out slightly moist.
- Cool in the tin for 10 minutes, then transfer to a wire rack to cool completely.
Notes
Consider refrigerating overnight for deeper flavor. Can be air-fried at 320°F for 10-12 minutes.
