Indulge in this creamy, spiced dish featuring succulent chicken and fluffy rice, all enveloped in a rich, velvety sauce with Cajun flavors.

Ingredients

Scale
  • 1 Tsp Salt
  • 1 Tsp Black Pepper
  • 1 Tsp Garlic Powder
  • 1 Tsp Onion Powder
  • 1 Tsp Oregano
  • 1 Tsp Thyme
  • 1 Tsp Paprika
  • 1 Tsp Chilli Powder
  • 800 g Chicken Breast (cut into halves)
  • 1.5 Tsp Cajun Seasoning Mix
  • 2 Tsp Olive Oil
  • 25 g Grass-Fed Butter for Cooking
  • 1 Medium Red Onion (chopped)
  • 45 Garlic Cloves (chopped)
  • 1/2 Tsp Cajun Seasoning Mix
  • Fresh Parsley (for garnish)
  • 15 g Grass-Fed Butter
  • 250 ml Milk
  • 150 g Light Cream Cheese
  • 40 g Parmesan

Instructions

  1. Marinate the Chicken: Combine chicken breast pieces with Cajun seasoning and olive oil. Seal in an airtight glass container and marinate overnight.
  2. Cook the Chicken: Heat a heavy-bottomed skillet and melt butter. Sear chicken until crispy and golden, about 6-7 minutes on each side. Let it rest before slicing.
  3. Prepare the Base: Sauté chopped red onion and garlic in the same skillet until fragrant. Add remaining Cajun seasoning and day-old rice, stirring to combine.
  4. Create the Creamy Sauce: Lower the heat, melt remaining butter, whisk in milk, and then gradually incorporate light cream cheese until creamy.
  5. Assemble Your Dish: Layer Cajun rice on a plate, top with chicken strips, drizzle with creamy sauce, and garnish with parsley.

Notes

For make-ahead meals, refrigerate and reheat gently before serving. Adjust spice levels as desired for your taste.
