Instructions
- Cook the couscous according to package instructions and set aside.
- In a bowl, mix olive oil, oregano, thyme, garlic powder, salt, and pepper.
- Add the diced chicken to the bowl and coat well with the herb mixture.
- Heat a skillet over medium heat and cook the chicken until golden brown and cooked through.
- In another bowl, combine grated cucumber, Greek yogurt, lemon juice, and minced garlic to make the tzatziki sauce.
- To serve, place couscous in a bowl, top with herbed chicken, and drizzle with tzatziki sauce.
- Garnish with fresh parsley.
