Description

  • 1 can diced tomatoes
  • 1 cup shredded vegan cheese
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 tablespoons olive oil
  • Fresh parsley for garnish

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Heat the olive oil in a large skillet over medium heat. Add the chopped onion and minced garlic, sauté until translucent, about 5 minutes.
  3. Stir in the drained white beans, diced tomatoes (with their juices), dried oregano, salt, and black pepper. Cook for another 5 minutes.
  4. Transfer the mixture to a prepared baking dish, ensuring an even layer.
  5. Top with shredded vegan cheese and bake for 20-25 minutes until the cheese is bubbly and golden.
