Description

Delicious and nutritious banana muffins made with Greek yogurt, perfect for a healthy breakfast or snack.


Ingredients

  • 2 ripe bananas
  • 1 cup Greek yogurt
  • 1/4 cup honey
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • Optional: chocolate chips or nuts

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Mash the bananas in a large mixing bowl until smooth.
  3. Incorporate the Greek yogurt, honey, egg, and vanilla into the mashed bananas.
  4. Whisk together the flour, baking soda, and salt in a separate bowl.
  5. Fold the wet mixture into the dry ingredients until just combined.
  6. If desired, fold in chocolate chips or nuts.
  7. Divide the batter into muffin cups, filling each about two-thirds full.
  8. Bake for 18-20 minutes, or until a toothpick comes out clean.
  9. Allow to cool before transferring to a wire rack.

Notes

These muffins can be frozen for up to three months and are perfect for busy mornings. Add spices or fruits for variety.
