- 2 ripe bananas
- 1 cup Greek yogurt
- 1/4 cup honey
- 1 egg
- 1 teaspoon vanilla extract
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- Optional: chocolate chips or nuts
Instructions
- Preheat your oven to 375°F (190°C).
- Mash the bananas in a large mixing bowl until smooth.
- Incorporate the Greek yogurt, honey, egg, and vanilla into the mashed bananas.
- Whisk together the flour, baking soda, and salt in a separate bowl.
- Fold the wet mixture into the dry ingredients until just combined.
- If desired, fold in chocolate chips or nuts.
- Divide the batter into muffin cups, filling each about two-thirds full.
- Bake for 18-20 minutes, or until a toothpick comes out clean.
- Allow to cool before transferring to a wire rack.
Notes
These muffins can be frozen for up to three months and are perfect for busy mornings. Add spices or fruits for variety.
