- 2 ripe bananas
- 1 cup rolled oats
- 1/2 cup peanut butter
- 1/2 cup chocolate chips
- 1/4 cup honey or maple syrup
- 1 tsp vanilla extract
- 1/2 tsp baking soda
- 1/4 tsp salt
Instructions
- Preheat your oven to 350°F (175°C).
- Mash the bananas until smooth.
- Stir in the peanut butter, honey or maple syrup, and vanilla extract until well combined.
- Add the rolled oats, baking soda, and salt to the mixture and mix until just incorporated.
- Fold in the chocolate chips gently.
- Drop spoonfuls of cookie dough onto a prepared baking sheet.
- Bake for 10-12 minutes until edges are light golden.
- Allow to cool and then transfer to a wire rack.
Notes
Make-ahead: Prepare the dough the night before and refrigerate. An air fryer works for cooking as well.
