Description

A delightful grilled chicken dish infused with the tropical flavors of pineapple, soy sauce, ginger, and garlic, perfect for any gathering.


Ingredients

  • 2 lbs chicken (thighs or breasts)
  • 1 cup pineapple juice
  • 1/2 cup soy sauce
  • 1 tablespoon fresh ginger (grated)
  • 2 cloves garlic (minced)
  • 1/4 cup brown sugar
  • 1 tablespoon sesame oil
  • 1/2 teaspoon black pepper
  • Green onions (for garnish)

Instructions

  1. Prepare the Marinade: In a mixing bowl, whisk together pineapple juice, soy sauce, ginger, garlic, brown sugar, sesame oil, and black pepper until sugar dissolves.
  2. Marinate the Chicken: Place the chicken in a resealable bag or dish, pour marinade over it, seal or cover, and refrigerate for at least 2 hours (overnight for best flavor).
  3. Preheat the Grill: Heat the grill to medium-high.
  4. Grill the Chicken: Remove chicken from marinade (discard leftover marinade) and grill for 6-7 minutes on each side until juices run clear and char is formed.
  5. Garnish and Serve: Remove from grill, sprinkle with green onions, and serve hot.

Notes

For deeper flavor, marinate overnight. Control saltiness by using low-sodium soy sauce.
