- 1 pound boneless, skinless chicken breasts, cut into bite-size pieces
- Salt and freshly ground black pepper
- 1/2 cup barbecue sauce
- 1/2 cup shredded mozzarella cheese
- 2/3 cup pineapple, chopped
- 1/4 red onion, chopped
- 1 romaine heart, chopped
- 1/4 cup fresh cilantro, chopped
- 4 large flour tortillas
Instructions
- Heat the oil in a large skillet over medium-high heat until shimmering.
- Cook the chicken pieces, seasoning with salt and pepper, until golden brown and cooked through (about 5-7 minutes).
- Add the barbecue sauce over the cooked chicken and toss to coat.
- Assemble the wrap by layering the tortilla with the barbecue chicken, mozzarella cheese, pineapple, red onion, romaine, and cilantro.
- Roll the tortilla burrito-style, tucking in the sides and securing if needed.
- Serve immediately while warm.
