Instructions
- In a bowl, combine the grated zucchini, diced ham, and shredded cheese.
- In another bowl, whisk together the flour, baking powder, salt, and pepper.
- In a separate bowl, mix the milk and egg until well combined.
- Gradually add the wet ingredients to the dry ingredients, stirring until just combined.
- Fold in the zucchini, ham, and cheese mixture.
- Heat a non-stick skillet over medium heat and lightly grease it.
- Pour small amounts of the batter onto the skillet and cook until bubbles form on the surface, then flip and cook until golden brown.
- Repeat with the remaining batter.
- Serve warm with your favorite dipping sauce or enjoy as is!
