Description

Deliciously moist muffins made with ripe bananas, Greek yogurt, and wholesome oats, perfect for breakfast or a snack.


Ingredients

  • 1 cup rolled oats
  • 2 ripe bananas
  • 1 cup Greek yogurt
  • 1/2 cup honey or maple syrup
  • 1/2 cup chocolate chips
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a muffin tin with liners.
  2. Mash the bananas in a large bowl until smooth.
  3. Stir in Greek yogurt, honey or maple syrup, and vanilla extract until well combined.
  4. Mix rolled oats with baking powder, baking soda, cinnamon, and salt in another bowl.
  5. Add the dry ingredients to the wet ingredients, stirring gently to combine.
  6. Fold in chocolate chips.
  7. Spoon the batter into prepared muffin cups, filling each about two-thirds full.
  8. Bake for 18-20 minutes, or until a toothpick comes out clean.
  9. Cool the muffins in the tin for a few minutes before transferring to a wire rack.

Notes

Use ripe bananas for optimal sweetness. You can experiment with add-ins like nuts or dried fruits.
