- 1 cup rolled oats
- 2 ripe bananas
- 1 cup Greek yogurt
- 1/2 cup honey or maple syrup
- 1/2 cup chocolate chips
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1 teaspoon vanilla extract
- 1/2 teaspoon cinnamon
- 1/4 teaspoon salt
Instructions
- Preheat your oven to 350°F (175°C) and prepare a muffin tin with liners.
- Mash the bananas in a large bowl until smooth.
- Stir in Greek yogurt, honey or maple syrup, and vanilla extract until well combined.
- Mix rolled oats with baking powder, baking soda, cinnamon, and salt in another bowl.
- Add the dry ingredients to the wet ingredients, stirring gently to combine.
- Fold in chocolate chips.
- Spoon the batter into prepared muffin cups, filling each about two-thirds full.
- Bake for 18-20 minutes, or until a toothpick comes out clean.
- Cool the muffins in the tin for a few minutes before transferring to a wire rack.
Notes
Use ripe bananas for optimal sweetness. You can experiment with add-ins like nuts or dried fruits.
