Description

A vibrant and refreshing Greek Lemon Rice dish that complements any meal with its zesty flavors.


Ingredients

  • 1 cup long-grain rice (Basmati or Jasmine)
  • 2 cups vegetable or chicken broth
  • 1 lemon (zested and juiced)
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Fresh parsley (for garnish)

Instructions

  1. Heat the olive oil in a heavy-bottomed pot over medium heat until it shimmers.
  2. Sauté the long-grain rice for about two minutes until it becomes fragrant.
  3. Combine the broth, lemon juice, lemon zest, oregano, salt, and pepper.
  4. Bring the mixture to a boil, then reduce heat to low and cover, simmering for 15-20 minutes.
  5. Fluff the rice with a fork and garnish with fresh parsley before serving.

Notes
