- 4 large Yukon Gold potatoes, cut into wedges
- 200g feta cheese, crumbled
- 3 tbsp extra virgin olive oil
- 3 cloves garlic, minced
- 1 tsp dried oregano
- Salt and pepper, to taste
Instructions
- Preheat the oven to 400°F (200°C).
- Wash and peel the potatoes, then cut them into wedges.
- In a large bowl, toss the potatoes with olive oil, minced garlic, oregano, salt, and pepper.
- Spread the potatoes on a baking sheet in a single layer.
- Crumble feta cheese over the potatoes.
- Roast in the oven for about 30-35 minutes, flipping midway.
- Serve warm as a side to grilled meats or fresh salads.
Notes
For a make-ahead option, prepare the potatoes a few hours in advance, cover, and refrigerate. Cook in the oven when ready to serve.
