Description

A deliciously crispy roasted potato dish enhanced by creaminess of feta cheese and aromatic garlic, perfect for any gathering.


Ingredients

  • 4 large Yukon Gold potatoes, cut into wedges
  • 200g feta cheese, crumbled
  • 3 tbsp extra virgin olive oil
  • 3 cloves garlic, minced
  • 1 tsp dried oregano
  • Salt and pepper, to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash and peel the potatoes, then cut them into wedges.
  3. In a large bowl, toss the potatoes with olive oil, minced garlic, oregano, salt, and pepper.
  4. Spread the potatoes on a baking sheet in a single layer.
  5. Crumble feta cheese over the potatoes.
  6. Roast in the oven for about 30-35 minutes, flipping midway.
  7. Serve warm as a side to grilled meats or fresh salads.

Notes

For a make-ahead option, prepare the potatoes a few hours in advance, cover, and refrigerate. Cook in the oven when ready to serve.
