Description

A delightful stir fry featuring tender chicken and zucchini noodles in a savory garlic sauce, perfect for busy weeknights.


Ingredients

  • 1 lb (450g) boneless, skinless chicken breasts
  • 3 medium zucchinis
  • 3 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 red bell pepper, sliced
  • 1 cup carrots, julienned
  • 1/4 cup low sodium soy sauce
  • 1 tablespoon honey
  • 1 tablespoon rice vinegar
  • 1 teaspoon grated ginger
  • 1/2 teaspoon red pepper flakes
  • Salt and black pepper, to taste
  • 2 tablespoons green onions, chopped
  • 1 tablespoon sesame seeds, for garnish

Instructions

  1. Cook the chicken: Heat 1 tablespoon of olive oil in a large pan or wok over medium-high heat. Add sliced chicken, sprinkle generously with salt and pepper, and stir-fry for 5-7 minutes until cooked through. Remove from the pan and set aside.
  2. Sauté the garlic: Pour in another tablespoon of olive oil into the same pan and heat until shimmering. Add minced garlic and sauté for about 1 minute until fragrant.
  3. Add the vegetables: Toss in the sliced red bell pepper and julienned carrots. Stir-fry for about 3-4 minutes until they soften.
  4. Whisk the sauce: In a small bowl, combine soy sauce, honey, rice vinegar, grated ginger, and red pepper flakes. Whisk until blended.
  5. Combine with chicken: Return the cooked chicken to the pan, pour the sauce over, and stir everything to coat. Cook for another 2-3 minutes.
  6. Cook the zucchini noodles: In a separate pan, heat the remaining olive oil over medium heat. Quickly sauté the spiralized zucchini noodles for about 2 minutes until tender.
  7. Toss everything together: Combine the zucchini noodles with the chicken and vegetables in the large pan.
  8. Garnish and serve: Remove from heat and finish with chopped green onions and sesame seeds. Serve immediately.
