Description

A delightful twist on classic banana bread, merging with the whimsical sensation of carrot cake for a moist and flavorful loaf.


Ingredients

  • 3 ripe bananas
  • 1 cup grated carrots
  • 1/2 cup almond flour
  • 1/2 cup gluten-free all-purpose flour
  • 1/4 cup maple syrup
  • 1/4 cup unsweetened applesauce
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 1/2 cup dairy-free frosting (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×5 inch loaf pan.
  2. Mash the ripe bananas in a large mixing bowl until smooth.
  3. Add in the grated carrots, almond flour, gluten-free flour, maple syrup, applesauce, baking soda, baking powder, cinnamon, nutmeg, and salt, mixing gently.
  4. Pour the batter into the prepared loaf pan and smooth the top.
  5. Bake for 50-60 minutes, or until a toothpick comes out clean.
  6. Cool in pan for about 10 minutes, then transfer to a wire rack to cool completely.
  7. Frost with dairy-free frosting if desired before slicing.

Notes

Can be made ahead of time; store covered at room temperature. Adapt baking time for air fryer use.
