- 3 ripe bananas
- 1 cup grated carrots
- 1/2 cup almond flour
- 1/2 cup gluten-free all-purpose flour
- 1/4 cup maple syrup
- 1/4 cup unsweetened applesauce
- 1/2 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/2 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1/4 teaspoon salt
- 1/2 cup dairy-free frosting (optional)
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×5 inch loaf pan.
- Mash the ripe bananas in a large mixing bowl until smooth.
- Add in the grated carrots, almond flour, gluten-free flour, maple syrup, applesauce, baking soda, baking powder, cinnamon, nutmeg, and salt, mixing gently.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 50-60 minutes, or until a toothpick comes out clean.
- Cool in pan for about 10 minutes, then transfer to a wire rack to cool completely.
- Frost with dairy-free frosting if desired before slicing.
