- 1 lb chicken breast, sliced
- 2 tbsp chili paste
- 2 cloves garlic, minced
- 1 cup chicken broth
- 1 cup mixed vegetables (bell peppers, carrots, broccoli)
- 1/2 cup heavy cream
- 2 tbsp soy sauce
- 1 tbsp olive oil
- Salt and pepper to taste
- Green onions for garnish
Instructions
- Heat olive oil in a large pot over medium heat.
- Add sliced chicken, season with salt, pepper, and chili paste, and sear until golden brown.
- Stir in minced garlic and cook for 1 minute.
- Pour in chicken broth and bring to a gentle simmer.
- Add mixed vegetables and cook for 3-5 minutes until tender.
- Meanwhile, cook ramen noodles according to package instructions.
- Once chicken is cooked, stir in heavy cream and soy sauce, adjusting seasoning as needed.
- Drain cooked ramen and divide into bowls.
- Top with chicken and vegetable mixture and garnish with green onions before serving hot.
