- 4 large leeks
- 1 pound ground beef
- 1 cup cooked rice
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup beef broth
- 1 tablespoon olive oil
Instructions
- Preheat the oven to 375°F (190°C).
- Trim the leeks and remove the outer layers, keeping them whole.
- In a skillet, heat olive oil over medium heat and sauté the onion and garlic until translucent.
- Add the ground beef, thyme, salt, and pepper, cooking until the beef is browned.
- Stir in the cooked rice and mix well.
- Carefully stuff each leek with the beef mixture.
- Place the stuffed leeks in a baking dish and pour beef broth over them.
- Cover with foil and bake for 30 minutes.
- Remove the foil and bake for an additional 15 minutes until leeks are tender.
