Ingredients

  • 4 large leeks
  • 1 pound ground beef
  • 1 cup cooked rice
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup beef broth
  • 1 tablespoon olive oil

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Trim the leeks and remove the outer layers, keeping them whole.
  3. In a skillet, heat olive oil over medium heat and sauté the onion and garlic until translucent.
  4. Add the ground beef, thyme, salt, and pepper, cooking until the beef is browned.
  5. Stir in the cooked rice and mix well.
  6. Carefully stuff each leek with the beef mixture.
  7. Place the stuffed leeks in a baking dish and pour beef broth over them.
  8. Cover with foil and bake for 30 minutes.
  9. Remove the foil and bake for an additional 15 minutes until leeks are tender.
