  • 1 cup dry orzo pasta
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1 cup fresh spinach, chopped
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning

Instructions

  1. Season the chicken breasts generously with salt and pepper on both sides.
  2. Heat the olive oil in a large skillet over medium heat and sear each chicken breast for about 6-7 minutes on each side.
  3. Set the chicken aside to rest in the skillet.
  4. Pour in the chicken broth, bringing it to a gentle simmer.
  5. Introduce the dry orzo, garlic powder, and Italian seasoning to the simmering broth.
  6. Cook for 10-12 minutes, stirring occasionally.
  7. Stir in the heavy cream and chopped spinach until combined.
  8. Add the grated Parmesan cheese and mix until a sauce is formed.
  9. Slice the rested chicken and serve on top of the creamy orzo mixture.
