- 1 lb ground beef or turkey
- 1 can black beans, drained and rinsed
- 1 can corn, drained
- 1 can diced tomatoes with green chilies
- 1 packet taco seasoning
- 8 small flour tortillas
- 2 cups shredded cheese (cheddar or Mexican blend)
- 1 cup sour cream
- 1/4 cup chopped green onions (optional)
- Fresh cilantro for garnish (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- Cook the ground beef or turkey in a large skillet over medium heat until browned.
- Add the black beans, corn, diced tomatoes, and taco seasoning to the skillet, stirring to combine.
- Layer four tortillas at the bottom of a baking dish.
- Spoon half of the meat mixture over the tortillas, followed by half of the shredded cheese.
- Repeat the layering with the remaining tortillas, meat mixture, and cheese.
- Spread the sour cream over the top layer of cheese.
- Cover the dish with foil and bake for 20 minutes.
- Remove the foil and bake for an additional 10 minutes until bubbly and golden.
- Let it cool for a few minutes before serving and garnish with green onions and cilantro.
