Description

A warm, comforting burrito casserole filled with layers of seasoned meat, beans, and creamy cheese, perfect for any occasion.


Ingredients

  • 1 lb ground beef or turkey
  • 1 can black beans, drained and rinsed
  • 1 can corn, drained
  • 1 can diced tomatoes with green chilies
  • 1 packet taco seasoning
  • 8 small flour tortillas
  • 2 cups shredded cheese (cheddar or Mexican blend)
  • 1 cup sour cream
  • 1/4 cup chopped green onions (optional)
  • Fresh cilantro for garnish (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cook the ground beef or turkey in a large skillet over medium heat until browned.
  3. Add the black beans, corn, diced tomatoes, and taco seasoning to the skillet, stirring to combine.
  4. Layer four tortillas at the bottom of a baking dish.
  5. Spoon half of the meat mixture over the tortillas, followed by half of the shredded cheese.
  6. Repeat the layering with the remaining tortillas, meat mixture, and cheese.
  7. Spread the sour cream over the top layer of cheese.
  8. Cover the dish with foil and bake for 20 minutes.
  9. Remove the foil and bake for an additional 10 minutes until bubbly and golden.
  10. Let it cool for a few minutes before serving and garnish with green onions and cilantro.
