Description

  • 3 large Eggs (Room temperature)
  • 1 cup Heavy Cream (Or non-dairy alternative)
  • 1/2 cup Cold Brew Coffee (Or strong brewed coffee)
  • 1 tablespoon Lemon Juice (Or vinegar)
  • 1/4 teaspoon Salt
  • 1/4 cup All-Purpose Flour (Optional for gluten-free)
  • 8 ounces Bittersweet Chocolate (Chopped)
  • 1 cup Heavy Cream (For topping)
  • 1 cup Powdered Sugar (Optional)
  • 1 teaspoon Vanilla Extract (Optional)
  • Chocolate Curls/Sprinkles, to taste
  • Chocolate-Covered Espresso Beans, to taste
  • 1 packet Instant Cheesecake Pudding Mix (Optional)

Instructions

  1. Prepare the crust: Preheat your oven to 325°F (160°C). In a mixing bowl, combine the crushed Oreos and melted butter until well mixed. Press into a greased 9-inch springform pan and bake for about 10 minutes. Let cool.
  2. Make the filling: Beat the softened cream cheese with a hand mixer until smooth. Gradually add granulated sugar, mixing well. Incorporate coffee extract, espresso powder, and salt.
  3. Add eggs one at a time, ensuring each is fully incorporated.
  4. Combine with heavy cream, cold brew coffee, and lemon juice until just combined.
  5. Optional: Fold in flour until just incorporated.
  6. Pour the cheesecake filling over the cooled crust and smooth the top. Bake for about 55 to 65 minutes.
  7. Cool in the oven with the door cracked for one hour, then refrigerate for at least 4 hours.
  8. Make the whipped cream: Beat the heavy cream until soft peaks form. Add powdered sugar and vanilla, beating to stiff peaks.
  9. Serve: Remove the cheesecake from the pan, top with whipped cream, chocolate curls, and espresso beans as desired.
