- 2 large carrots, peeled and grated
- 2 medium apples, cored and diced (e.g., Granny Smith or Honeycrisp)
- 1 cup red cabbage, finely shredded
- 1/2 cup raisins or dried cranberries
- 1/2 cup walnuts or pecans, chopped
- 1/4 cup fresh parsley, chopped
- 1/4 cup plain Greek yogurt
- 1/4 cup mayonnaise
- 2 tablespoons fresh orange juice
- 1 tablespoon lemon juice
- 1 teaspoon honey (or to taste)
- Salt and pepper to taste
Instructions
- Start by peeling and grating the carrots into a large mixing bowl.
- Core and chop the apples into small pieces, adding them to the bowl.
- Finely shred the red cabbage and toss it into the mix along with the raisins or cranberries, nuts, and parsley.
- In a separate bowl, combine Greek yogurt, mayonnaise, orange juice, lemon juice, honey, salt, and pepper. Whisk until smooth.
- Pour the dressing over the salad mixture and gently toss to coat.
- Chill in the refrigerator for about 15 minutes before serving.
- Serve chilled or at room temperature, garnished with extra nuts or parsley.
