Description

A vibrant salad featuring crunchy carrots, sweet apples, and creamy citrus dressing, perfect for any occasion.


Ingredients

  • 2 large carrots, peeled and grated
  • 2 medium apples, cored and diced (e.g., Granny Smith or Honeycrisp)
  • 1 cup red cabbage, finely shredded
  • 1/2 cup raisins or dried cranberries
  • 1/2 cup walnuts or pecans, chopped
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup plain Greek yogurt
  • 1/4 cup mayonnaise
  • 2 tablespoons fresh orange juice
  • 1 tablespoon lemon juice
  • 1 teaspoon honey (or to taste)
  • Salt and pepper to taste

Instructions

  1. Start by peeling and grating the carrots into a large mixing bowl.
  2. Core and chop the apples into small pieces, adding them to the bowl.
  3. Finely shred the red cabbage and toss it into the mix along with the raisins or cranberries, nuts, and parsley.
  4. In a separate bowl, combine Greek yogurt, mayonnaise, orange juice, lemon juice, honey, salt, and pepper. Whisk until smooth.
  5. Pour the dressing over the salad mixture and gently toss to coat.
  6. Chill in the refrigerator for about 15 minutes before serving.
  7. Serve chilled or at room temperature, garnished with extra nuts or parsley.

Notes
