Description

Delicious tacos filled with tender, smoky chicken, drizzled with honey and topped with fresh ingredients.


Ingredients

  • 2 cups cooked shredded chicken
  • 2 tablespoons honey
  • 2 chipotle peppers in adobo, minced
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1½ cups shredded Monterey Jack or mozzarella cheese
  • 8 small corn tortillas
  • 2 tablespoons olive oil
  • ¼ cup chopped fresh cilantro
  • ¼ cup diced red onion

Instructions

  1. Heat a large skillet over medium heat until hot.
  2. Combine shredded chicken, honey, minced chipotle peppers, garlic powder, and onion powder in a bowl. Mix until the chicken is evenly coated.
  3. Add olive oil to the skillet and swirl to coat.
  4. Warm the tortillas slightly in a pan or microwave.
  5. Fill each tortilla with a generous amount of the chicken mixture and a sprinkling of shredded cheese.
  6. Gently fold the tortillas and place them in the skillet. Press gently with a spatula.
  7. Cook for 2–3 minutes on each side until crispy and golden brown.
  8. Remove from the skillet and sprinkle with chopped cilantro and diced red onion before serving.

Notes

You can prepare the chipotle chicken mixture ahead of time and store it in the refrigerator. Warm it up before filling your tacos for convenience.
