- 1/2 cup panko breadcrumbs

- 2 eggs
- 1/2 cup mayonnaise
- 2 tablespoons sweet chili sauce
- 1 tablespoon Sriracha
- Salt and pepper to taste
- Cooking oil for frying
Instructions
- Cut the salmon into bite-sized pieces, roughly an inch thick.
- Prepare a breading station with flour, beaten eggs, and panko breadcrumbs in separate shallow dishes.
- Season salmon pieces with salt and pepper.
- Dredge each piece in flour, then dip in eggs, and finally coat with panko, pressing gently.
- Heat oil in a skillet over medium heat.
- Fry the salmon bites until golden brown, about 3-4 minutes per side.
- Mix mayonnaise, sweet chili sauce, and Sriracha in a bowl to create the Bang Bang sauce.
- Serve hot with sauce on the side for dipping.
