Ingredients

  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1/2 cup orange juice
  • 1 tablespoon orange zest
  • 1 cup fresh or frozen cranberries, chopped

Instructions

  1. Preheat the oven to 350°F (175°C) and grease mini loaf pans.
  2. In a large bowl, mix flour, sugar, baking powder, and salt.
  3. In another bowl, cream the butter and sugar until light and fluffy.
  4. Add eggs, orange juice, and orange zest to the butter mixture and mix well.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Fold in the chopped cranberries.
  7. Pour the batter into the prepared mini loaf pans.
  8. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
  9. Let cool in the pans for 10 minutes before transferring to a wire rack to cool completely.
