- 2 cups bowtie pasta
- 1 pound chicken breast, cubed
- 2 cups broccoli florets
- 1/2 cup unsalted butter
- 2 cloves garlic, minced
- 1 unit lemon, juiced and zested
- 1 teaspoon paprika
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Cook the pasta in a large pot of salted boiling water according to package instructions. Drain and set aside.
- In a large skillet over medium heat, melt a couple of tablespoons of butter. Add cubed chicken, season with salt, pepper, and paprika. Cook until golden brown and cooked through, about 5-7 minutes.
- Add minced garlic to the skillet and sauté until fragrant, about 1 minute. Stir in broccoli florets and cook until bright green and tender crisp, about 5 minutes.
- Pour remaining melted butter into the skillet and add lemon juice and zest, stirring to combine. Let bubble slightly to meld flavors.
- Add drained pasta to the skillet with chicken and broccoli. Toss to coat everything in the buttery sauce. Adjust seasoning as needed.
- Garnish with fresh parsley before serving warm.
Notes
For a healthier option, substitute whole wheat pasta. You can also swap chicken for chickpeas or tofu for a vegetarian meal.
