Description

A delightful fusion of tender chicken, vibrant broccoli, and bowtie pasta in a rich cowboy butter sauce with zesty lemon and garlic.


Ingredients

  • 2 cups bowtie pasta
  • 1 pound chicken breast, cubed
  • 2 cups broccoli florets
  • 1/2 cup unsalted butter
  • 2 cloves garlic, minced
  • 1 unit lemon, juiced and zested
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Cook the pasta in a large pot of salted boiling water according to package instructions. Drain and set aside.
  2. In a large skillet over medium heat, melt a couple of tablespoons of butter. Add cubed chicken, season with salt, pepper, and paprika. Cook until golden brown and cooked through, about 5-7 minutes.
  3. Add minced garlic to the skillet and sauté until fragrant, about 1 minute. Stir in broccoli florets and cook until bright green and tender crisp, about 5 minutes.
  4. Pour remaining melted butter into the skillet and add lemon juice and zest, stirring to combine. Let bubble slightly to meld flavors.
  5. Add drained pasta to the skillet with chicken and broccoli. Toss to coat everything in the buttery sauce. Adjust seasoning as needed.
  6. Garnish with fresh parsley before serving warm.

Notes

For a healthier option, substitute whole wheat pasta. You can also swap chicken for chickpeas or tofu for a vegetarian meal.
