Description

Delicious Coconut Cheesecake Brownies combining rich chocolate flavor with creamy coconut for a delightful dessert experience.


Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup coconut cream cheese (or regular cream cheese)
  • 1/2 cup shredded coconut
  • 1/4 cup powdered sugar

Instructions

  1. Preheat your oven to 350°F (175°C) and grease an 8×8-inch baking pan, lining it with parchment paper.
  2. Whisk together flour, cocoa powder, baking powder, and salt in a mixing bowl.
  3. Mix melted butter and granulated sugar until smooth, then add eggs one at a time, followed by vanilla extract.
  4. Combine the dry ingredients into the wet mixture, folding gently until mixed.
  5. Beat the coconut cream cheese and powdered sugar until smooth, then fold in shredded coconut.
  6. Pour half of the brownie batter into the prepared pan, smooth it, followed by the coconut cream cheese mixture, and top with remaining brownie batter.
  7. Swirl the mixture with a knife to create a marbled effect.
  8. Bake for 25-30 minutes until set. Cool before cutting into squares.

Notes

Store in an airtight container in the fridge for up to a week. For longer storage, freeze individually wrapped brownies for up to three months.
