- 2 Chorizo sausages
- 4 tortillas (flour or corn)
- 4 eggs
- 2 cups diced and cooked potatoes
- Salt and pepper to taste
- Fresh cilantro (optional)
- Salsa (optional)
Instructions
- Heat a non-stick skillet over medium heat and add the chorizo sausages, cooking for about 5–7 minutes.
- Beat the eggs in a separate bowl with salt and pepper. Pour the eggs into the skillet when the chorizo is cooked, stirring until fluffy (about 2–3 minutes).
- Spread the cooked potato and chorizo-egg mixture onto each tortilla.
- Fold in the sides of the tortilla and roll tightly from the bottom upwards.
- Serve warm, garnished with cilantro and accompanied by salsa.
Notes
For extra flavor, consider adding jalapeños or integrating cheese inside the burritos. These burritos can be made ahead of time and reheated for convenience.
