Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a large mixing bowl, whisk together the rolled oats, flour, sugar, baking powder, baking soda, and salt until well combined.
- In a separate bowl, mash the ripe bananas until smooth. Whisk in the milk, vegetable oil, vanilla extract, and egg until creamy.
- Pour the wet ingredients into the dry ingredients and gently mix until just combined.
- Fold in the chocolate chips with a spatula.
- Divide the batter among muffin cups, filling each about two-thirds full.
- Bake for 18-20 minutes or until a toothpick inserted comes out clean.
- Allow the muffins to cool in the pan for a few minutes before transferring them to a wire rack.

For added flavor, consider using overripe bananas and avoid overmixing the batter to maintain a fluffy texture.
