Description

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large mixing bowl, whisk together the rolled oats, flour, sugar, baking powder, baking soda, and salt until well combined.
  3. In a separate bowl, mash the ripe bananas until smooth. Whisk in the milk, vegetable oil, vanilla extract, and egg until creamy.
  4. Pour the wet ingredients into the dry ingredients and gently mix until just combined.
  5. Fold in the chocolate chips with a spatula.
  6. Divide the batter among muffin cups, filling each about two-thirds full.
  7. Bake for 18-20 minutes or until a toothpick inserted comes out clean.
  8. Allow the muffins to cool in the pan for a few minutes before transferring them to a wire rack.
