Description

  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 1/2 cups fresh pineapple (diced)
  • 1/4 cup red onion (finely chopped)
  • 1/2 jalapeño (seeded and minced)
  • 2 tablespoons fresh cilantro (chopped)
  • Juice of 1 lime
  • Pinch of salt
  • 8 small corn or flour tortillas
  • 1/2 cup shredded cabbage or lettuce (optional)
  • Lime wedges
  • Extra cilantro for garnish

Instructions

  1. Preheat the Oven or Grill: Start by preheating your oven to 400°F (200°C) or your grill to medium-high heat.
  2. Prepare the Marinade: In a small mixing bowl, whisk together olive oil, honey, adobo sauce, minced chipotle pepper, garlic powder, smoked paprika, salt, and black pepper until well combined.
  3. Coat the Salmon: Place the salmon fillets on your prepared baking sheet or grill. Brush the marinade generously over the salmon pieces, ensuring they are coated evenly.
  4. Cook the Salmon: If baking, roast for 12–15 minutes, or grill for 10–12 minutes. The salmon should be cooked through and easily flake apart when tested with a fork.
  5. Make the Pineapple Salsa: While the salmon cooks, mix together the diced pineapple, red onion, jalapeño, cilantro, lime juice, and a pinch of salt in a bowl. Stir well to combine, and refrigerate until ready to serve.
  6. Flake the Salmon: Once cooked, gently transfer the salmon to a plate and flake it into large chunks using a fork.
  7. Assemble the Tacos: Warm the tortillas, then layer salmon into each tortilla. Top the salmon generously with the pineapple salsa, and add shredded cabbage or lettuce if desired. Garnish with extra cilantro and serve lime wedges on the side.
