Description

A flavorful dish featuring juicy marinated chicken thighs paired with creamy smoked gouda mashed potatoes.


Ingredients

  • 4 chicken thighs
  • 2 tablespoons chipotle in adobo sauce
  • 2 tablespoons honey
  • Salt and pepper to taste
  • 2 cups potatoes, peeled and cubed
  • 1/2 cup smoked gouda cheese, shredded
  • 1/4 cup milk
  • 2 tablespoons butter

Instructions

  1. In a mixing bowl, combine the chipotle in adobo, honey, salt, and pepper. Stir until smooth.
  2. Coat the chicken thighs in the marinade, ensuring each piece is generously covered. Let them marinate for at least 30 minutes.
  3. Bring a pot of salted water to a boil. Add the peeled and cubed potatoes and cook until tender, about 15 minutes. Drain and return the potatoes to the pot.
  4. Add in the shredded smoked gouda, milk, and butter. Mash until smooth and creamy.
  5. Preheat your grill or a skillet over medium heat. Cook the marinated chicken thighs for 6-7 minutes on each side or until cooked through.
  6. Arrange the chicken on plates, serve alongside the smoked gouda mashed potatoes, and enjoy!

Notes

For deeper flavor, marinate the chicken a day in advance. You can cook the chicken thighs in an air fryer as a healthier option.
