- 4 chicken thighs
- 2 tablespoons chipotle in adobo sauce
- 2 tablespoons honey
- Salt and pepper to taste
- 2 cups potatoes, peeled and cubed
- 1/2 cup smoked gouda cheese, shredded
- 1/4 cup milk
- 2 tablespoons butter
Instructions
- In a mixing bowl, combine the chipotle in adobo, honey, salt, and pepper. Stir until smooth.
- Coat the chicken thighs in the marinade, ensuring each piece is generously covered. Let them marinate for at least 30 minutes.
- Bring a pot of salted water to a boil. Add the peeled and cubed potatoes and cook until tender, about 15 minutes. Drain and return the potatoes to the pot.
- Add in the shredded smoked gouda, milk, and butter. Mash until smooth and creamy.
- Preheat your grill or a skillet over medium heat. Cook the marinated chicken thighs for 6-7 minutes on each side or until cooked through.
- Arrange the chicken on plates, serve alongside the smoked gouda mashed potatoes, and enjoy!
Notes
For deeper flavor, marinate the chicken a day in advance. You can cook the chicken thighs in an air fryer as a healthier option.
