Description

A vibrant and flavorful dish featuring seasoned ground beef and a zesty chimichurri sauce, served with fresh vegetables and your choice of rice or quinoa.


Ingredients

  • 500 g Ground Beef
  • 1 cup Fresh Cilantro, chopped
  • ½ cup Fresh Parsley, chopped
  • 34 Garlic Cloves, finely chopped
  • ¼ cup Red Wine Vinegar
  • ½ cup Olive Oil
  • ½ teaspoon Salt
  • ¼ teaspoon Pepper
  • Vegetables of Choice: Bell pepper, cucumber, and tomato
  • Rice or Quinoa for Serving

Instructions

  1. Season the ground beef with salt and pepper in a mixing bowl, combining well.
  2. Heat a splash of olive oil in a heavy-bottomed skillet over medium heat, then add the seasoned beef.
  3. Cook until the meat is golden brown and fully cooked through, stirring occasionally.
  4. Prepare the chimichurri sauce by mixing cilantro, parsley, garlic, red wine vinegar, olive oil, salt, and pepper in a separate bowl.
  5. Divide the cooked beef into serving bowls and add your chosen fresh vegetables on top.
  6. Drizzle the chimichurri sauce over the beef and veggies, and serve with rice or quinoa.

Notes

Chimichurri sauce can be prepared a day in advance for enhanced flavors. Customize your bowl by adding avocado or feta cheese.
