A vibrant and flavorful Chicken Zucchini Stir Fry that combines tender chicken and crunchy zucchini in a savory garlic sauce.
Ingredients
Scale
- 1 lb boneless chicken thighs
- 1 medium zucchini
- 3 cloves garlic
- 1 teaspoon cornstarch
- 1/4 cup light soy sauce
- 1 teaspoon sesame oil
- 2 teaspoons sugar (or honey)
- 1 tablespoon rice apple vinegar (optional)
- 1 tablespoon cooking oil
- 1 tablespoon oyster sauce

- Sauté garlic: Add the smashed garlic cloves and allow them to sizzle for about 30 seconds.
- Cook the chicken: Introduce the marinated chicken to the hot wok and cook for approximately 2 minutes until browned.
- Set it aside: Remove the chicken and set it aside.
- Stir-fry zucchini: Toss the sliced zucchini into the wok and stir-fry for about 5 minutes.
- Combine and finish: Return the chicken to the wok, add oyster sauce and ground black pepper, and stir-fry for an additional 2-3 minutes.
- Serve hot: Scoop your Chicken Zucchini Stir Fry over rice or mix it into noodles.
Notes
