Description

A vibrant and flavorful Chicken Zucchini Stir Fry that combines tender chicken and crunchy zucchini in a savory garlic sauce.


Ingredients

  • 1 lb boneless chicken thighs
  • 1 medium zucchini
  • 3 cloves garlic
  • 1 teaspoon cornstarch
  • 1/4 cup light soy sauce
  • 1 teaspoon sesame oil
  • 2 teaspoons sugar (or honey)
  • 1 tablespoon rice apple vinegar (optional)
  • 1 tablespoon cooking oil
  • 1 tablespoon oyster sauce
  • Ground black pepper (optional)

Instructions

  1. Marinate the chicken: Cut the chicken thighs into bite-sized pieces. In a mixing bowl, combine them with cornstarch, soy sauce, sesame oil, sugar (or honey), and rice apple vinegar. Let it marinate for at least 30 minutes to deepen the flavor.
  2. Heat the pan: Preheat your wok over medium-high heat. Pour in the cooking oil and allow it to shimmer.
  3. Sauté garlic: Add the smashed garlic cloves and allow them to sizzle for about 30 seconds.
  4. Cook the chicken: Introduce the marinated chicken to the hot wok and cook for approximately 2 minutes until browned.
  5. Set it aside: Remove the chicken and set it aside.
  6. Stir-fry zucchini: Toss the sliced zucchini into the wok and stir-fry for about 5 minutes.
  7. Combine and finish: Return the chicken to the wok, add oyster sauce and ground black pepper, and stir-fry for an additional 2-3 minutes.
  8. Serve hot: Scoop your Chicken Zucchini Stir Fry over rice or mix it into noodles.

Notes
