- 4 ciabatta rolls
- 2 chicken breasts, grilled and sliced
- 4 tbsp basil pesto
- 8 slices of fresh mozzarella
- 1 large tomato, sliced
- Olive oil for grilling
- Salt and pepper to taste
Instructions
- Heat a grill pan over medium-high heat.
- Brush the ciabatta halves with olive oil.
- Spread approximately 1 tablespoon of basil pesto on each bottom half.
- Layer with sliced grilled chicken, mozzarella slices, and tomato. Season with salt and pepper.
- Close the sandwiches and grill each side for 2-3 minutes until golden brown and cheese is melted.
- Slice sandwiches in half and serve warm.
Notes
You can marinate the chicken in advance for added flavor. Consider adding fresh greens like spinach for extra freshness.
