Description

Delicious grilled chicken layered with fresh mozzarella, ripe tomatoes, and vibrant basil pesto, all wrapped in crispy ciabatta rolls.


Ingredients

  • 4 ciabatta rolls
  • 2 chicken breasts, grilled and sliced
  • 4 tbsp basil pesto
  • 8 slices of fresh mozzarella
  • 1 large tomato, sliced
  • Olive oil for grilling
  • Salt and pepper to taste

Instructions

  1. Heat a grill pan over medium-high heat.
  2. Brush the ciabatta halves with olive oil.
  3. Spread approximately 1 tablespoon of basil pesto on each bottom half.
  4. Layer with sliced grilled chicken, mozzarella slices, and tomato. Season with salt and pepper.
  5. Close the sandwiches and grill each side for 2-3 minutes until golden brown and cheese is melted.
  6. Slice sandwiches in half and serve warm.

Notes

You can marinate the chicken in advance for added flavor. Consider adding fresh greens like spinach for extra freshness.
