- 12 oz pasta (spaghetti, linguine, or penne)
- 2 tablespoons olive oil (for caramelizing onions)
- 1 large yellow onion, thinly sliced
- 3 cloves garlic, minced
- Salt and pepper, to taste
- 3 tablespoons olive oil (for chili oil)
- 1 tablespoon red chili flakes
- 1 teaspoon paprika
- 1 small garlic clove, thinly sliced
- 1 teaspoon soy sauce
- Grated Parmesan cheese, for serving
- Fresh basil or parsley, chopped, for garnish
- Extra chili flakes, optional
Instructions
- In a skillet, heat 2 tablespoons of olive oil over medium heat. Add the sliced onion and a pinch of salt. Cook slowly, stirring occasionally, until caramelized, about 20-30 minutes.
- In a small saucepan, combine 3 tablespoons of olive oil, sliced garlic, red chili flakes, paprika, and soy sauce. Heat on low until fragrant.
- Cook pasta in salted boiling water until al dente, reserving about 1 cup of pasta water before draining.
- In the pot with the drained pasta, add caramelized onions and drizzle in the chili oil mixture. Toss to combine, adding reserved pasta water gradually to achieve desired sauce consistency. Stir in grated Parmesan.
- Serve warm, garnished with chopped herbs and additional chili flakes if desired.
Notes
Onions can be caramelized ahead of time and stored in the refrigerator for up to five days. Consider using whole grain or gluten-free pasta options.
