Description

A vibrant one-skillet dish combining Cajun sausage, honey, and garlic over fluffy rice, perfect for a quick weeknight dinner.


Ingredients

  • 1 pound Cajun sausage (kielbasa or andouille)
  • 1 cup uncooked long-grain or jasmine rice
  • 2 cups chicken broth
  • 2 tablespoons honey
  • 2 cloves garlic, minced
  • 1 cup bell peppers, diced
  • 1 onion, diced
  • 1 teaspoon Cajun seasoning
  • Salt and pepper, to taste
  • 1 tablespoon olive oil
  • Green onions, for garnish

Instructions

  1. In a large skillet, warm the olive oil over medium heat until shimmering but not smoking.
  2. Add the diced sausage and cook until golden brown, about 5-7 minutes.
  3. Stir in the diced onions and bell peppers and sauté until tender, about 3-4 minutes. Add the minced garlic for another minute.
  4. Add the uncooked rice and Cajun seasoning, mixing well to coat the rice.
  5. Pour in the chicken broth and honey, stirring gently. Increase the heat to bring it to a boil.
  6. Once boiling, reduce the heat to low, cover, and simmer for 15-20 minutes or until the rice is fluffy and liquid is absorbed.
  7. Taste and season with salt and pepper. Garnish with sliced green onions before serving.

Notes

Pair this dish with a fresh green salad or garlic bread for a complete meal. Store leftovers in an airtight container for 3-4 days.
