- 1 pound Cajun sausage (kielbasa or andouille)
- 1 cup uncooked long-grain or jasmine rice
- 2 cups chicken broth
- 2 tablespoons honey
- 2 cloves garlic, minced
- 1 cup bell peppers, diced
- 1 onion, diced
- 1 teaspoon Cajun seasoning
- Salt and pepper, to taste
- 1 tablespoon olive oil
- Green onions, for garnish
Instructions
- In a large skillet, warm the olive oil over medium heat until shimmering but not smoking.
- Add the diced sausage and cook until golden brown, about 5-7 minutes.
- Stir in the diced onions and bell peppers and sauté until tender, about 3-4 minutes. Add the minced garlic for another minute.
- Add the uncooked rice and Cajun seasoning, mixing well to coat the rice.
- Pour in the chicken broth and honey, stirring gently. Increase the heat to bring it to a boil.
- Once boiling, reduce the heat to low, cover, and simmer for 15-20 minutes or until the rice is fluffy and liquid is absorbed.
- Taste and season with salt and pepper. Garnish with sliced green onions before serving.
