Instructions
- Preheat your oven to 350°F (175°C).
- Cream together brown sugar, granulated sugar, and softened butter until smooth and fluffy.
- Beat in the egg and vanilla extract until well combined.
- Whisk together flour, baking soda, salt, and ground cinnamon in a separate bowl.
- Add the dry mix to the wet ingredients, stirring gently until incorporated.
- Take about a tablespoon of dough and flatten it in your palm, placing a caramel candy in the center.
- Mold the dough around the caramel to form a ball.
- Place the cookie balls on a lined baking sheet, leaving space for expansion.
- Bake for 10-12 minutes until edges are golden and slightly firm.
- Cool on the baking sheet briefly before transferring to a wire rack.
