Description

Deliciously comforting blueberry oatmeal crumble bars with a buttery oat base and bursting with sweet-tart blueberries.


Ingredients

  • 1 cup all-purpose flour
  • 3/4 cup old-fashioned oats
  • 1/2 cup granulated sugar
  • 1/4 cup packed brown sugar
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 1 large egg yolk
  • 2 cups blueberries
  • 1 tablespoon lemon juice
  • 1/4 cup granulated sugar for filling
  • 2 teaspoons cornstarch

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare an 8×8 baking pan by lining it with parchment paper.
  2. Whisk together the flour, oats, granulated sugar, brown sugar, cinnamon, and salt in a large bowl. Add melted butter and egg yolk, mixing until crumbly.
  3. Combine blueberries, lemon juice, granulated sugar for filling, and cornstarch in another bowl, mixing gently.
  4. Press the oat mixture firmly into the bottom of the lined baking pan. Spread the blueberry mixture on top and sprinkle reserved crumble over it.
  5. Bake for 30-35 minutes until golden brown and bubbly.
  6. Allow to cool completely before cutting into squares.

Notes

Store in an airtight container in the refrigerator for up to 5 days, or freeze for up to 3 months.
