Description
Deliciously comforting blueberry oatmeal crumble bars with a buttery oat base and bursting with sweet-tart blueberries.

- 1 cup all-purpose flour
- 3/4 cup old-fashioned oats
- 1/2 cup granulated sugar
- 1/4 cup packed brown sugar
- 1/2 teaspoon cinnamon
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, melted
- 1 large egg yolk
- 2 cups blueberries
- 1 tablespoon lemon juice
- 1/4 cup granulated sugar for filling
- 2 teaspoons cornstarch
Instructions
- Preheat your oven to 350°F (175°C) and prepare an 8×8 baking pan by lining it with parchment paper.
- Whisk together the flour, oats, granulated sugar, brown sugar, cinnamon, and salt in a large bowl. Add melted butter and egg yolk, mixing until crumbly.
- Combine blueberries, lemon juice, granulated sugar for filling, and cornstarch in another bowl, mixing gently.
- Press the oat mixture firmly into the bottom of the lined baking pan. Spread the blueberry mixture on top and sprinkle reserved crumble over it.
- Bake for 30-35 minutes until golden brown and bubbly.
- Allow to cool completely before cutting into squares.

Store in an airtight container in the refrigerator for up to 5 days, or freeze for up to 3 months.
