Description

Delightful blackberry turnovers featuring a flaky puff pastry filled with sweet-tart blackberries and a hint of lemon.


Ingredients

  • 1 package of puff pastry sheets
  • 2 cups fresh blackberries
  • 1/4 cup sugar
  • 1 tablespoon lemon juice
  • 1 teaspoon cornstarch
  • 1 egg (for egg wash)
  • Powdered sugar (for dusting)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Prepare the filling by combining blackberries, sugar, lemon juice, and cornstarch in a mixing bowl.
  3. Roll out the puff pastry sheets on a floured surface to about 1/8 inch thick.
  4. Cut the rolled pastry into 4-inch squares.
  5. Fill each square with a spoonful of the blackberry mixture.
  6. Assemble the turnovers by folding the pastry squares over into triangles and sealing the edges.
  7. Brush the tops with beaten egg for a golden finish.
  8. Bake for 20-25 minutes until golden brown.
  9. Cool slightly and dust with powdered sugar before serving.

Notes

Make-ahead by preparing the filling in advance. Use frozen blackberries as an alternative to fresh.
