Description

A one-pan meal featuring tender chunks of chicken and caramelized sweet potatoes, all enveloped in flavorful BBQ sauce.


Ingredients

  • 2 medium sweet potatoes, cubed
  • 2 cups cooked chicken, shredded
  • 1 cup BBQ sauce
  • 1 medium red onion, sliced
  • 1 cup corn (fresh or frozen)
  • 1 cup cheddar cheese, shredded
  • 1 tablespoon olive oil
  • Salt and black pepper, to taste
  • 1 teaspoon smoked paprika
  • 1/4 cup green onions, chopped

Instructions

  1. Prep the sweet potatoes: Cut sweet potatoes into even cubes.
  2. Heat the pan: In a large pan, warm 1 tablespoon of olive oil over medium heat. Add sweet potatoes, cooking for about 10-15 minutes until tender and just starting to brown.
  3. Add the onions and corn: Toss in sliced red onions and corn, cooking for an additional 3-4 minutes.
  4. Stir in the chicken and BBQ sauce: Add the cooked chicken and BBQ sauce, stirring to combine for another 5 minutes.
  5. Top with cheese: Sprinkle cheddar cheese over the mixture, cover the pan, and let it melt for about 3-4 minutes.
  6. Garnish and serve: Finish with chopped green onions before serving.

Notes

For a quicker method, use an air fryer for the sweet potatoes or roast everything in the oven at 400°F for about 25-30 minutes.
