- 2 medium Sweet Potatoes, diced
- 2 cups Cooked Chicken, shredded
- 1/2 cup BBQ Sauce
- 1 medium Red Onion, diced
- 1 cup Corn (canned or frozen)
- 1 cup Cheddar Cheese, shredded
- 2 tbsp Olive Oil
- Salt, to taste
- Black Pepper, to taste
- 1 tsp Smoked Paprika
- 2 Green Onions, chopped
Instructions
- Heat olive oil in a large skillet over medium heat. Add diced sweet potatoes, season with salt, pepper, and smoked paprika. Cook for 10-12 minutes until tender and caramelized.
- Add the diced red onion and corn, stirring for an additional 5 minutes until onions are tender.
- Stir in the cooked chicken and BBQ sauce, mix well, and let simmer for a few minutes.
- Reduce heat, sprinkle cheddar cheese on top, cover until melted. Garnish with green onions and serve hot.
Notes
Preheat the skillet to enhance caramelization. Customize with different vegetables or proteins as desired.
