- 2 cups cooked rice
- 1 cup cooked chicken, diced
- 2 eggs, scrambled
- 1 cup mixed vegetables
- 3 tablespoons bang bang sauce
- 2 tablespoons soy sauce
- 2 tablespoons green onions, chopped
- 1 tablespoon sesame oil
- Salt and pepper to taste
Instructions
- Heat the sesame oil in a large pan or wok over medium-high heat.
- Add the mixed vegetables and stir-fry for 2-3 minutes until tender.
- Push the veggies to one side and add the scrambled eggs. Cook until set.
- Stir in the diced chicken, cooked rice, bang bang sauce, and soy sauce.
- Cook for another 3-5 minutes to meld the flavors.
- Season with salt and pepper to taste.
- Serve hot, garnished with chopped green onions.
Notes
Use day-old rice for the best texture. Customize with different proteins or add heat with red pepper flakes.
