Description

A moist and indulgent cake made with ripe bananas and toasted walnuts, topped with creamy frosting—a perfect treat for any occasion.


Ingredients

  • 2 cups all-purpose flour
  • 1.5 teaspoons baking soda
  • 0.5 teaspoon baking powder
  • 0.5 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1 cup vegetable oil
  • 0.5 cup granulated sugar
  • 0.5 cup packed light brown sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1.5 cups mashed very ripe bananas (about 34 large bananas)
  • 0.5 cup buttermilk
  • 1 cup chopped toasted walnuts
  • 8 oz cream cheese
  • 0.5 cup unsalted butter (softened)
  • 4 cups powdered sugar
  • 1.5 teaspoons vanilla extract
  • A pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and line a 9×13 inch baking pan with parchment paper.
  2. Toast the walnuts in a dry skillet over medium heat for about 3-5 minutes.
  3. Mix the dry ingredients: whisk together flour, baking soda, baking powder, salt, and cinnamon in a medium bowl.
  4. Cream the wet ingredients in a large bowl: whisk together vegetable oil, granulated sugar, and brown sugar. Add eggs one at a time, mixing well after each addition. Stir in vanilla extract until smooth.
  5. Combine the mashed bananas, whisk in buttermilk, and pour this mixture into the wet ingredients. Mix just until combined.
  6. Fold in the dry ingredients gradually, being careful not to over-mix. Finally, fold in the toasted walnuts.
  7. Bake the cake for 35-40 minutes, until a skewer comes out clean.
  8. Cool the cake in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  9. Prepare the frosting by beating cream cheese and butter until smooth, then gradually add powdered sugar, vanilla extract, and a pinch of salt.
  10. Frost the cooled cake with the cream cheese frosting and sprinkle additional toasted walnuts on top.

Notes

Customize with different nuts or chocolate chips, and can be made a day in advance for deeper flavors.
