Description

Deliciously crispy baked taquitos filled with spicy buffalo chicken, cream cheese, and melted cheddar, perfect for any gathering or cozy night in.


Ingredients

  • 34 boneless, skinless chicken breasts (about 1 lb)
  • 1 cup buffalo sauce
  • 8 oz cream cheese, softened
  • 1 cup shredded cheddar cheese
  • 8 flour tortillas (8-inch)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a skillet, cook the chicken over medium heat until fully cooked, about 20 minutes. Let cool slightly before shredding.
  3. In a mixing bowl, combine shredded chicken, buffalo sauce, and cream cheese. Mix until well combined.
  4. Lay tortillas flat and fill each with the chicken mixture. Roll tightly, tucking in the sides to secure the filling.
  5. Place taquitos seam-side down on a parchment-lined baking sheet, ensuring a little space between them.
  6. Bake for 15-20 minutes until golden brown and crispy.
  7. Serve topped with chopped green onions and a dollop of sour cream.

Notes

You can prepare the filling in advance and freeze assembled taquitos for later. Bake directly from frozen, adding a few extra minutes to the cook time.
