- 1 cup unsalted butter (softened)
- 1/2 cup brown sugar
- 1/2 cup granulated sugar
- 1 large egg
- 1/4 cup apple cider
- 1 tsp vanilla extract
- 2 1/4 cups all-purpose flour
- 1/2 tsp baking soda
- 1 tsp cinnamon
- 1/4 tsp nutmeg
- 1/4 tsp salt
- 1 cup diced apples
- 1/2 cup powdered sugar (for glaze)
- 1–2 tbsp apple cider (for glaze)
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Cream the softened butter and sugars in a large mixing bowl using an electric mixer until light and fluffy, about 2-3 minutes.
- Add the egg, vanilla extract, and apple cider, mixing until well combined.
- Whisk together the flour, baking soda, cinnamon, nutmeg, and salt in a medium bowl.
- Slowly add the dry ingredients to the wet mixture, mixing until just combined.
- Fold in the diced apples carefully with a spatula.
- Scoop dough onto the prepared baking sheet, spacing them about 2 inches apart.
- Bake for 10-12 minutes until edges are lightly golden and centers are set but still soft.
- Remove and let cool on the baking sheet for a few minutes before transferring to a wire rack.
- Glaze by whisking together the powdered sugar and apple cider until smooth, then drizzle over each cookie.
