Description

Delightful cookies infused with apple cider, warm spices, and a sweet glaze, perfect for celebrating autumn.


Ingredients

  • 1 cup unsalted butter (softened)
  • 1/2 cup brown sugar
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1/4 cup apple cider
  • 1 tsp vanilla extract
  • 2 1/4 cups all-purpose flour
  • 1/2 tsp baking soda
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/4 tsp salt
  • 1 cup diced apples
  • 1/2 cup powdered sugar (for glaze)
  • 12 tbsp apple cider (for glaze)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Cream the softened butter and sugars in a large mixing bowl using an electric mixer until light and fluffy, about 2-3 minutes.
  3. Add the egg, vanilla extract, and apple cider, mixing until well combined.
  4. Whisk together the flour, baking soda, cinnamon, nutmeg, and salt in a medium bowl.
  5. Slowly add the dry ingredients to the wet mixture, mixing until just combined.
  6. Fold in the diced apples carefully with a spatula.
  7. Scoop dough onto the prepared baking sheet, spacing them about 2 inches apart.
  8. Bake for 10-12 minutes until edges are lightly golden and centers are set but still soft.
  9. Remove and let cool on the baking sheet for a few minutes before transferring to a wire rack.
  10. Glaze by whisking together the powdered sugar and apple cider until smooth, then drizzle over each cookie.
